Yes, I'm talking about the vegetable.
I've been fairly tolerant of celeries my mother used to put in her macaroni salad and sometimes her pancit. Last December, however, my view of celery has changed and recently, I now have a high respect for it.
During day 2 of our 3-day company Christmas party, I saw my boss chopping celeries at the kitchen counter. I asked what it was for, and to my surprise, he said it was for the spaghetti. I was skeptical about it, but when I tasted it... well, it's simply one of the best spaghetti I've ever had. My respect for him has sky rocketted; a feat since we all think of him as nothing but a perverted SOB.
I've been thinking about celeries since then (God, how pathetic!), and always looking for a chance to try my own spaghetti with celery. My sister was as skeptical as I was last December, but after tasting the sause, she was also conviced.
Soups, omelettes, and this everning, curry. It enhances the flavor in a way that salt, pepper and a little sugar cannot do.
